I would like to know if there is a document(s) which provides more detailed explanations of the task options. I think it would be helpful when processing imagery if I understood these options fully.

The best there is is http://docs.opendronemap.org, but that is pretty young and more details need written for sure. Anything in particular you are interested in?

I think the “Usage” section of the link you provided will help. I was looking for more explanation for each processing option so I can understand how changing the values will affect the processing and product.
